Roasted Lamb Leg with Herb Butter

Equipment

  • Deep Cast Iron Skillet
  • Food Processor

Ingredients
  

  • Local Lamb Leg
  • 1 Head Garlic
  • 1 Cup Butter, softened
  • 1 Tbsp Rosemary
  • 1/2 Tbsp Chives
  • 1 Tbsp Parsley
  • 1/2 - 1 Tbsp Salt
  • 1-2 Tbsp Olive Oil
  • 2 Lemons, squeezed

Instructions
 

  • Heat oven to 425 degrees and place the cast iron in there to heat it up.
  • While the oven is heating, place butter in a wide bowl. Mince the garlic in a food processor or garlic mincer. Add the garlic to the butter and mix.
  • Add in the rosemary, chives, parsley, and 1/2 tbsp salt. Mix well into the butter using a fork to corporate it.
  • Once the oven is heated, use an oven mitt to bring out the cast iron and place on a hot pad. Carefully butter the cast iron and then place the lamb leg in the cast iron. 
  • Sprinkle the lamb leg with some salt that was left over all around. Drizzle olive oil over the lamb and then add the infused butter on top. Pour the squeezed lemon juice all over the lamb. 
  • Place in the oven with the lid on for 30 minutes. After 30 minutes, take the lid off and cook for another 30 minutes. 
  • After 1 hour, check the temperature of the lamb. It should be 165 degrees cooked.
