Put a little fat (butter, lard, or tallow) on the bottom of the crock. Heat up medium sized cast iron skillet on medium-low heat for 5 minutes.
After the skillet is heated, add butter to the cast iron and cover the whole pan. Salt and pepper the beef on both sides. Sear beef on all sides for a couple of minutes each side. Set aside.
Chop carrots, celery, and potatoes into a size you prefer.
Add the carrots, celery, and potatoes to the bottom. Add half the sliced onions on top of the veggies.
Next place the beef on top and add the other half of the onions on top of the beef and the whole garlic cloves.
After, pour in bone broth up until just above the meat.
Cook on high for 4 hours or low for 8 hours.
Serve as is or with pasta, mashed potatoes, or a side you prefer! Enjoy!
