Beef Roast | Beef Broth Regimen Meal 2

Ingredients
  

  • 1 Tbsp Butter
  • 1 Large Onion, sliced
  • 1 Head Garlic
  • 6 Carrots, cut to your preference
  • 4 Celery Stalks, cut to your preference

Instructions
 

  • Put a little fat (butter, lard, or tallow) on the bottom of the crock. Heat up medium sized cast iron skillet on medium-low heat for 5 minutes. 
  •  After the skillet is heated, add butter to the cast iron and cover the whole pan. Salt and pepper the beef on both sides. Sear beef on all sides for a couple of minutes each side. Set aside.
  • Chop carrots, celery, and potatoes into a size you prefer. 
  • Add the carrots, celery, and potatoes to the bottom. Add half the sliced onions on top of the veggies.
  • Next place the beef on top and add the other half of the onions on top of the beef and the whole garlic cloves.
  • After, pour in bone broth up until just above the meat.
  • Cook on high for 4 hours or low for 8 hours.
  • Serve as is or with pasta, mashed potatoes, or a side you prefer! Enjoy!
