Read more to find out how to make my healthy Fettuccine Alfredo that is absolutely delicious. This meal is super easy to make and one that I find making pretty much every other week. This dish is jam packed with nutrition and I’ve been told it is better than Olive Garden!
I must say that my heart and stomach yearn for pasta often. Coming from an Italian family, pasta was always staple for meals with homemade sauce, meatballs, and all the deliciousness. We were always a red sauce family, and no one had ever attempted to make an alfredo sauce; well, until now!
If I am being honest, I LOVE white sauce. I am a huge fan of cheese, so the white sauce is a beautiful touch to the pasta.
White sauce is a lot easier than most people believe it to be, and it also CAN be nutritious. I think the alfredo gets a bad wrap for being fattening, when in all reality the ingredients can be replaced with nutrition packed options to make it a healthier choice!
Of course everything in moderation, but there is nothing better than something that taste amazing AND is good for you!
My motto has always been – Make it good for the tummy and good for the soul.
WHAT FATS DO I USE FOR THIS RECIPE?
There are many different fats you could use for this recipe including butter, olive oil, and avocado oil. I preferably love to use raw milk butter for the fat of choice for this recipe. I have also used both oils before and it has turned out wonderful every time!
WHAT FLOUR SHOULD I USE FOR THIS RECIPE?
You can use any flour that you prefer. We used einkorn in this recipe for added nutrition and helping it be more beneficial towards the gut. I plan to do a blog post soon all on the benefits of einkorn and how it affects our guts.
WHAT MILK SHOULD I USE FOR THIS RECIPE?
There are a couple different options you can choose from. I like to use our raw milk, but I will also mix in our Raw Milk Kefir to add in extra nutrition. I don’t ever really taste a difference when I use Kefir!
You can also use heavy cream if you would like the sauce a little thicker, but I feel it is already thick enough using regular milk or Kefir.
WHAT PASTA CHOICE SHOULD I USE FOR THIS RECIPE?
I have recently discovered einkorn pasta from Thrive Market, and LOVE it in this recipe. I have also used whole grain pasta from Aldis, which is what I used in the photos.
If you would like to have more nutrition to this recipe I would recommend using the einkorn noodles and they are mighty delicious.
WHAT TYPE OF CHEESE SHOULD I USE?
The best type of cheese to use for this recipe is parmesan cheese.
HOW MANY PEOPLE WILL THIS RECIPE FEED?
This recipe for a half cup of pasta will feed around 6-8 people.
SUPPLIES YOU WILL NEED
INGREDIENTS YOU WILL NEED
2 tbsp Butter or Oil
1 head of Garlic
4 tbsp Einkorn Flour (or Flour of Choice)
1 cup Bone Broth
1 cup Milk or Kefir
1-2 cups Parmesan Cheese
2 tsp Salt
Dash of Pepper
1 tbsp Parsley

HOW TO MAKE HEALTHY FETTUCCINE ALFREDO
1. Bring a pot of water to a boil. Once boiling, place noodles and stir frequently. Boil the noodles until they are tender.
2. Place a 2″ deep cast iron on the stove top and preheat your cast iron on medium-low heat until it is warm and ready. Mince the garlic.
3. When hot, place butter in the pan and spread around until fully melted. Once melted, add in garlic and stir until fragrant. Then add in flour and stir frequently until it looks clumpy.
4. Once it looks clumpy, slowly pour in the bone broth and whisk together well. The rue should start to become thick.
5. After everything is all mixed together well and most of the clumps are stirred through, slowly pour in the milk. Keep whisking as you stir to create the perfect rue.
6. Shred the parmesan cheese. I prefer to have the shavings a little thicker for this sauce.
7. When the cheese is shredded, add it to the mixture and stir till it is all mixed through with no clumps.
8. Spice with salt, pepper, and parsley.
9. Drain noodles then add them to the rue and combine evenly.
10. Top with extra parsley and parmesan cheese, and dinner is served!

WHAT TO ADD TO YOUR ALFREDO FOR MORE NUTRITION AND FLAVOR
You can totally get creative with this dish. Obviously adding protein is a must and I have used both chicken and shrimp for this recipe making it taste amazing either way.
I have also mixed vegetables in the pasta including spinach and kale adding nutrition and flavor. Don’t knock it before you try it because it is so delightful.
