I will not lie, blogging has been hard for me lately. I am not sure if it is the constant pressure to have these perfect blogs to be able to be monetized or if it is just me being lazy, but something has to change! Have you ever felt this way about anything?
Anyways, I didn’t know what I wanted to make for Easter for awhile. Desserts are always a thing, but I will real when I say that I am not the best baker or dessert creator. Cookies are my go-to always but they’re usually not really creative.
Then it came to me a couple months ago – we need to have a simple, effective, delicious meal and the lamb leg was created!
Now, it’s no new thing but it is definitely new to this family. Our family has just started eating lamb more frequently, and well I must say we have missed out for a lot of our lives on some delicious meat!
WHY YOU SHOULD MAKE A ROASTED LAMB LEG FOR EASTER
Easter is a beautiful holiday. It is focused around the death and resurrection of Jesus and the sacrifice He made for us. I am constantly tearing up thinking about all he has done for all of us, and especially in our family.
On this holiday I truly believe it needs to be focused on this alone. I feel many of us get caught up in holidays – creating beautiful tablescapes, having the perfect meal, setting up the best egg hunt. That is all wonderful and beautiful, and I don’t full condemn that. Although, I don’t believe it should become for the forefront of the holiday.
So with that, I wanted to create a main course that is super simple, super delicious, and little to no thought or prep to prepare it.
Hence, the lamb leg with herb butter. That is all it is! Lamb leg with herb butter. Just a few simple steps and you will have a beautiful, quick, delicious dinner for Easter.
TIPS FOR MAKING ROASTED LAMB LEG:
- Add the spices to the butter the night before if you can to really have an infused butter that really creates a beautiful flavor.
- You will need to use a cast iron with a lid for this recipe to get the best cooking for the meat.
- You don’t need the lemon juice but it sure is good!

INGREDIENTS YOU WILL NEED:
Local Lamb Leg
1 Head of Garlic
1 Cup Butter, softened
1 Tbsp Rosemary
1/2 Tbsp Chives
1 Tbsp Parsley
1/2-1 Tbsp Salt
1-2 Tbsp Olive Oil
2 Lemons, squeezed
HOW TO MAKE ROASTED LAMB LEG:
- Heat oven to 425 degrees and place the cast iron in there to heat it up.
- While the oven is heating, place butter in a wide bowl. Mince the garlic in a food processor or garlic mincer. Add the garlic to the butter and mix.
- Add in the rosemary, chives, parsley, and 1/2 tbsp salt. Mix well into the butter using a fork to corporate it.
- Once the oven is heated, use an oven mitt to bring out the cast iron and place on a hot pad. Carefully butter the cast iron and then place the lamb leg in the cast iron.
- Sprinkle the lamb leg with some salt that was left over all around. Drizzle olive oil over the lamb and then add the infused butter on top. Pour the squeezed lemon juice all over the lamb.
- Place in the oven with the lid on for 30 minutes. After 30 minutes, take the lid off and cook for another 30 minutes.
- After 1 hour, check the temperature of the lamb. It should be 165 degrees cooked.
- Enjoy!
